Date-sweetened cocoa cupcakes

Ingredients:
- 8 Medjool dates (or 15 Deglet Noor)
- 2 tbsp oil
- 7 tbsp applesauce (4 oz)
- 2 eggs
- ⅔ cup buttermilk
- ½ cup all purpose flour
- ½ cup spelt flour (can sub all purpose flour)
- ½ cup cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
Instructions:
Preheat oven to 350˚F. Butter or line muffin tin.
Pit and chop 8 Medjool (or 15 Deglet Noor) dates.
Blend in processor oil, apple sauce, 1 egg, and chopped dates. Transfer to mixing bowl.
Mix in the second egg and buttermilk.
In a measuring cup, stir together all purpose flour, flour, cocoa powder, baking powder, baking soda, and salt. Pour the flour mixture into the wet batter and stir until just combined. Pour into muffin cups.
Bake at 350˚F for ~25 minutes, until cupcake tops are springy to the touch.
