Pancakes

Ingredients:

  • 1 egg
  • 1 cup buttermilk (or simply add 1 Tablespoon lemon juice or vinegar to 1 cup milk and let it sit 5 minutes)
  • 2 Tablespoon canola or sunflower seed oil
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: grated apple

Instructions:

Beat egg, add remaining ingredients in the order listed and beat until smooth.

Grease heated pan with bit of oil. Pour batter from large spoon or from pitcher onto hot griddle. Turn pancakes as soon as they are puffed and full of bubbles but before bubbles break. Cook other side until golden brown.
